Ingredients

  • 2 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cup milk
  • 1/3 cup butter
  • 1 tsp vanilla extract
  • 1/4 cup sugar mixed with 1 tbsp cinnamon, for coating
  • butter for brushing
  • 4 oz Mexican chocolate (Ibarra; chopped)
  • 1/2 cup heavy cream
  • whipped cream for serving

Steps

  1. 1

Preheat waffle iron. Mix flour, sugar, baking powder, cinnamon, and salt.

  2. 2

Whisk eggs, milk, melted butter, and vanilla. Pour into dry ingredients and stir until just combined.

  3. 3

Cook waffles according to your waffle iron's instructions until golden and crispy.

  4. 4

Make chocolate sauce: heat heavy cream in a saucepan, add chopped Mexican chocolate, and stir until smooth and glossy.

  5. 5

Brush warm waffles with melted butter and press into the cinnamon-sugar mixture on both sides.

  6. 6

Serve drizzled with Mexican chocolate sauce and a cloud of whipped cream.

Save it, plan it, cook it.
