Churro Waffles with Mexican Chocolate Sauce

- 2 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1 1/2 cup milk
- 1/3 cup butter
- 1 tsp vanilla extract
- 1/4 cup sugar mixed with 1 tbsp cinnamon, for coating
- butter for brushing
- 4 oz Mexican chocolate (Ibarra; chopped)
- 1/2 cup heavy cream
- whipped cream for serving

Preheat waffle iron. Mix flour, sugar, baking powder, cinnamon, and salt.

Whisk eggs, milk, melted butter, and vanilla. Pour into dry ingredients and stir until just combined.

Cook waffles according to your waffle iron's instructions until golden and crispy.

Make chocolate sauce: heat heavy cream in a saucepan, add chopped Mexican chocolate, and stir until smooth and glossy.

Brush warm waffles with melted butter and press into the cinnamon-sugar mixture on both sides.
