Pressure Cooker Egg Bite Cups

Ingredients
- 6 eggs
- 1/2 cup cottage cheese
- 1/2 cup gruyère cheese
- 4 slices bacon, cooked and crumbled
- 2 tbsp red peppers
- salt and pepper, to taste
- cooking spray
- 1 cup water, for the pressure cooker

Blend eggs, cottage cheese, gruyère, salt, and pepper in a blender until smooth.

Spray a 7-cup silicone egg bite mold with cooking spray.

Divide bacon crumbles and roasted red peppers among the cups, then pour egg mixture over the top.

Cover mold tightly with foil. Pour 1 cup water into the pressure cooker and place the trivet inside.

Set the mold on the trivet. Lock lid and cook on high pressure for 8 minutes.

Quick release pressure. Remove mold, let cool 2 minutes, then pop out the egg bites and serve.
