Whole30 Sausage and Veggie Breakfast Skillet

Ingredients
- 1 lb Whole30-compliant chicken sausage (sliced into rounds)
- 1 tbsp avocado oil
- 2 cup butternut squash
- 1 zucchini (diced)
- 1 red bell pepper (diced)
- 1 cup kale, stems removed and chopped
- 3 cloves garlic (minced)
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- salt and pepper, to taste
- 4 fried eggs, for topping
- herbs, for garnish

Heat avocado oil in a large cast iron skillet over medium heat.

Add butternut squash and cook 8-10 minutes until starting to soften and brown.

Add sausage rounds and cook 3 minutes until browned.

Add zucchini, bell pepper, garlic, Italian seasoning, and smoked paprika. Cook 4-5 minutes until vegetables are tender.

Stir in kale and cook until just wilted. Season with salt and pepper.

Top each serving with a fried egg and fresh herbs.
