Grilled Mediterranean Lamb Chops

Ingredients
- 8 lamb rib chops (about 1 inch thick)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh oregano, chopped
- zest and juice of 1 lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, halved
- 1 cup cherry tomatoes, halved
- tzatziki sauce, for serving

Combine olive oil, garlic, rosemary, oregano, lemon zest, lemon juice, salt, and pepper. Coat lamb chops and marinate for at least 30 minutes.

Preheat grill to high heat (450-500°F).

Grill lamb chops for 3-4 minutes per side for medium-rare (145°F internal).

Let rest for 5 minutes.

Arrange on a platter and top with crumbled feta, olives, and cherry tomatoes.

Serve with tzatziki sauce on the side.
