Ingredients

  • 6 large egg yolks
  • 3/4 cup sugar
  • 16 oz mascarpone cheese
  • 2 cup s heavy whipping cream
  • 2 cup s strong espresso or brewed coffee, cooled
  • 3 tbsp coffee liqueur, optional
  • 1 package (7 oz) ladyfinger biscuits (savoiardi)
  • unsweetened cocoa powder, for dusting
  • dark chocolate shavings, for garnish

Steps

    Whisk egg yolks and sugar together until thick, pale, and doubled in volume, about 4 minutes.

    Add mascarpone and beat until smooth and creamy.

    In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the mascarpone mixture.

    Combine cooled espresso and coffee liqueur in a shallow dish.

    Quickly dip each ladyfinger in the espresso mixture (don't soak — just a quick dip on each side).

    Line the bottom of a 9x13 dish with dipped ladyfingers. Spread half the mascarpone cream over them.

    Add a second layer of dipped ladyfingers and the remaining cream. Smooth the top.

    Cover and refrigerate for at least 6 hours (overnight is ideal). Dust generously with cocoa powder and top with chocolate shavings before serving.
