Lebanese Fattoush Salad

Ingredients
- 2 pita breads, torn into bite-sized pieces
- 2 tbsp olive oil, for pita
- 1 head romaine lettuce (chopped)
- 2 tomatoes (diced)
- 1 English cucumber (diced)
- 4 radishes (thinly sliced)
- 1/2 cup parsley (chopped)
- 1/4 cup mint (chopped)
- 3 green onions (sliced)
- 2 tbsp sumac
- 1/4 cup extra virgin olive oil
- 3 tbsp lemon juice
- 1 clove garlic (minced)
- salt and pepper, to taste

Toss torn pita with 2 tbsp olive oil and toast in the oven at 375°F for 5-7 minutes until golden and crispy.

Whisk together 1/4 cup olive oil, lemon juice, garlic, 1 tbsp sumac, salt, and pepper for the dressing.

Combine lettuce, tomatoes, cucumber, radishes, parsley, mint, and green onions in a large bowl.

Add toasted pita chips and toss with the dressing.

Sprinkle remaining sumac on top and serve immediately while the pita is still crispy.
