Ingredients
- 1 lb pork
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 2 cloves garlic (minced)
- 1 tbsp lemongrass paste
- 2 cup jasmine rice
- 1 cup pickled carrots and daikon (do chua)
- 1 English cucumber (sliced)
- 1 jalapeño (sliced)
- cilantro and Thai basil
- sriracha mayo for drizzling
- peanuts

Cook ground pork in a skillet over high heat, breaking into crumbles, until browned and crispy.

Add garlic, lemongrass paste, soy sauce, fish sauce, and brown sugar. Stir-fry for 2 minutes until caramelized.

Divide jasmine rice among bowls. Top with caramelized pork.

Arrange pickled carrots and daikon, cucumber slices, jalapeño, cilantro, and Thai basil around the bowl.

Drizzle with sriracha mayo and sprinkle with crushed peanuts.
