- 1 can refried beans (16 oz; warmed)
- 1 cup queso fresco or cotija cheese
- 1 cup Honduran crema or sour cream
- 2 ripe avocados (sliced)

Mix flour, baking powder, and salt. Add oil and warm water, kneading until a smooth, pliable dough forms. Divide into 8 balls and rest 10 minutes.

Roll each ball into a thin 7-inch round on a floured surface.

Cook on a dry, hot griddle or comal for 1-2 minutes per side until lightly charred with brown spots — the tortilla should stay soft and pliable.

While still warm, spread a generous layer of refried beans down the center of each tortilla.

Top with crumbled cheese, crema, avocado slices, and scrambled eggs if using.
