Coconut Chia Pudding with Tropical Fruit

- 2 cup full-fat coconut milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 mango (diced)
- 1 cup pineapple (diced)
- 2 kiwis (sliced)
- 1/4 cup coconut flakes
- passion fruit pulp, optional

Whisk chia seeds, coconut milk, maple syrup, and vanilla in a bowl.

Refrigerate for at least 4 hours or overnight, stirring once after the first 30 minutes to prevent clumping.

When ready to serve, stir the pudding — it should be thick and gel-like.

Divide among bowls or jars and top with diced mango, pineapple, kiwi, toasted coconut, and passion fruit pulp.
