High-Protein Beef Jerky Bites

Ingredients
- 2 lb beef eye of round (trimmed and sliced very thin (1/8 inch))
- 1/4 cup coconut aminos
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1/2 tsp chili flakes
- 1/2 tsp salt

Partially freeze the beef for 1 hour to make slicing easier. Slice against the grain into very thin strips.

Marinate beef strips in coconut aminos, smoked paprika, garlic powder, onion powder, pepper, chili flakes, and salt. Refrigerate for at least 4 hours or overnight.

Preheat oven to 175°F (or lowest setting). Line baking sheets with wire racks.

Arrange beef strips in a single layer on the racks, not touching.

Bake for 3-4 hours, flipping once, until dried and chewy but not brittle.

Cool completely. Store in an airtight container for up to 2 weeks.
