Paleo Chicken Zoodle Soup

Ingredients
- 1 tbsp olive oil
- 1 onion (diced)
- 3 carrots (peeled and diced)
- 3 stalks celery (diced)
- 4 cloves garlic (minced)
- 8 cup chicken broth
- 2 cup rotisserie chicken
- 4 zucchini, spiralized
- 1 tsp thyme
- 1 bay leaf
- salt and pepper, to taste
- parsley, for garnish

Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes.

Add garlic, thyme, and bay leaf. Cook 1 minute.

Pour in chicken broth and bring to a boil. Simmer for 10 minutes until vegetables are tender.

Add shredded chicken and zucchini noodles. Cook just 2-3 minutes until zoodles are tender (don't overcook).

Remove bay leaf. Season with salt and pepper.

Serve garnished with fresh parsley.
