Ingredients

  • 4 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 6 cup s beef broth
  • 1 tbsp fresh thyme leaves
  • 2 bay leaves
  • 1 tbsp Worcestershire sauce
  • 6 slices French bread, toasted
  • 2 cup s shredded Gruyère cheese

Steps

  1. 1

Melt butter with olive oil in a large Dutch oven over medium heat. Add sliced onions, sugar, and salt.

  2. 2

Cook onions, stirring occasionally, for 40-50 minutes until deeply caramelized and golden brown. Reduce heat if they start to burn.

  3. 3

Add garlic and cook 1 minute. Pour in white wine and scrape up any browned bits.

  4. 4

Add beef broth, thyme, bay leaves, and Worcestershire. Bring to a simmer and cook for 20 minutes.

  5. 5

Remove bay leaves and season with salt and pepper to taste.

  6. 6

Preheat broiler. Ladle soup into oven-safe bowls. Top each with a slice of toasted bread and a generous mound of Gruyère.

  7. 7

Broil for 2-3 minutes until cheese is bubbly and golden.

  8. 8

Serve immediately — careful, it's hot!

Save it, plan it, cook it.
