Classic Hummus with Pita

Ingredients
- 2 cans (15 oz each) chickpeas, drained and rinsed (reserve liquid)
- 1/3 cup tahini
- 3 tbsp lemon juice
- 2 cloves garlic
- 1/2 tsp cumin
- 3 -4 tbsp aquafaba (reserved chickpea liquid) or ice water
- 2 tbsp extra virgin olive oil
- salt to taste
- smoked paprika and olive oil, for topping
- pita bread or raw vegetables, for serving
Steps

Process tahini and lemon juice in a food processor for 1 minute until light and whipped.

Add garlic, cumin, and salt. Process another 30 seconds.

Add chickpeas and process for 1 minute. Scrape sides.

With the processor running, slowly drizzle in aquafaba until hummus is very smooth and creamy, about 2 minutes of processing.

Taste and adjust lemon juice and salt as needed.

Spread on a plate, create swirls with the back of a spoon, drizzle with olive oil, and sprinkle with paprika.

Serve with warm pita bread or fresh vegetables.
