Mediterranean Olive Oil Cake

Ingredients
- 3 eggs
- 1 cup sugar
- 3/4 cup extra virgin olive oil
- 3/4 cup orange juice
- zest of 1 orange
- zest of 1 lemon
- 2 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- powdered sugar, for dusting
- berries, for serving

Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.

Whisk eggs and sugar until thick and pale, about 3 minutes.

Stream in olive oil while whisking. Add orange juice, orange zest, and lemon zest.

Fold in flour, baking powder, and salt until just combined.

Pour into the prepared pan and bake for 35-40 minutes until a toothpick comes out clean.

Cool in the pan for 10 minutes, then turn out onto a wire rack.

Dust with powdered sugar and serve with fresh berries.
