Ingredients
- 1 cup rolled oats (certified GF if needed)
- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/4 cup mini chocolate chips
- 1/4 cup dried cranberries
- 2 tbsp ground flaxseed
- 1/4 cup unsweetened shredded coconut
- 1/4 cup sunflower seeds
- 1 tsp vanilla extract
- pinch of salt

Combine all ingredients in a large bowl and mix until evenly combined.

Refrigerate for 30 minutes to make the mixture easier to handle.

Roll into 1-inch balls using slightly damp hands.

Place on a parchment-lined tray and refrigerate for at least 1 hour to firm up.

Store in an airtight container in the fridge for up to 2 weeks.
