Ingredients

  • 8 oz dark chocolate (70% cacao or higher, dairy-free), chopped
  • 1 ripe avocado
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • pinch of sea salt
  • unsweetened cocoa powder, for rolling
  • crushed pistachios, for rolling
  • coconut flakes, for rolling

Steps

    Melt dark chocolate in a double boiler or microwave. Let cool for 5 minutes.

    Blend avocado until completely smooth (no chunks). Mix into the melted chocolate along with maple syrup, vanilla, and sea salt.

    Refrigerate the mixture for 1-2 hours until firm enough to scoop.

    Roll into 1-inch balls using your hands.

    Roll truffles in cocoa powder, crushed pistachios, or coconut flakes.

    Refrigerate for at least 30 minutes to set. Store in the fridge for up to a week.
