Ingredients
- 10 eggs
- 1/4 cup milk or cream
- 1 cup cherry tomatoes (halved)
- 1/2 cup Kalamata olives (halved)
- 1/2 cup feta cheese
- 2 cup spinach
- 1/4 cup sun-dried tomatoes (chopped)
- 2 tbsp olive oil
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 tsp oregano
- salt and pepper, to taste
- basil, for garnish

Preheat oven to 375°F. Heat olive oil in a 10-inch oven-safe skillet over medium heat.

Sauté onion until softened. Add garlic and spinach, cooking until wilted.

Add cherry tomatoes and sun-dried tomatoes. Cook 1 minute.

Whisk eggs with milk, oregano, salt, and pepper. Pour over the vegetables.

Scatter olives and feta over the top.

Cook on stovetop for 3 minutes until edges begin to set, then transfer to the oven.

Bake 15-18 minutes until set and lightly golden. Let cool 5 minutes, garnish with basil, and slice into wedges.
