Vegan Cauliflower Tikka Masala

Ingredients
- 1 head cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp garam masala, for roasting
- 1 tbsp coconut oil
- 1 onion (finely diced)
- 4 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 2 tbsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 can tomatoes (14 oz)
- 1 can full-fat coconut milk (14 oz)
- 1 tsp salt
- cilantro, for garnish
- basmati rice or cauliflower rice, for serving

Preheat oven to 425°F. Toss cauliflower with olive oil, 1 tsp garam masala, and salt. Roast for 20 minutes until golden and tender.

Meanwhile, heat coconut oil in a large pot over medium heat. Sauté onion until softened, about 5 minutes.

Add garlic, ginger, 2 tbsp garam masala, turmeric, cumin, and chili powder. Cook 1 minute until fragrant.

Stir in crushed tomatoes and simmer for 10 minutes.

Pour in coconut milk and stir until combined. Simmer 5 more minutes.

Add roasted cauliflower to the sauce and gently toss to coat.

Garnish with cilantro and serve over basmati rice or cauliflower rice.
