Ingredients

  • 1 baguette, sliced diagonally into 1/2-inch slices
  • 4 ripe Roma tomatoes, seeded and diced
  • 1/4 cup fresh basil, chiffonade
  • 2 cloves garlic, minced, plus 1 whole clove for rubbing
  • 2 tbsp extra virgin olive oil, plus more for drizzling
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste

    Toast baguette slices under the broiler or on a grill for 1-2 minutes per side until golden.

    Rub each warm toast with the cut side of a garlic clove.

    Toss diced tomatoes with basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper.

    Let the tomato mixture sit for 10 minutes to develop flavor.

    Spoon the tomato mixture generously onto each toast. Drizzle with extra olive oil.
