Mediterranean Stuffed Mini Peppers

Ingredients
- 12 mini sweet peppers (halved and seeded)
- 4 oz goat cheese (softened)
- 4 oz cream cheese (softened)
- 1/4 cup sun-dried tomatoes (finely chopped)
- 2 tbsp basil (chopped)
- 1 tbsp pine nuts
- 1 tsp oregano
- 1 tbsp olive oil
- salt and pepper, to taste

Preheat oven to 400°F. Arrange pepper halves cut-side up on a baking sheet.

Mix goat cheese, cream cheese, sun-dried tomatoes, basil, oregano, salt, and pepper until well combined.

Fill each pepper half with the cheese mixture. Top with pine nuts.

Drizzle with olive oil.

Bake for 12-15 minutes until peppers are tender and filling is slightly golden.

Serve warm or at room temperature.
