Paleo Plantain Chips with Guacamole

Ingredients
- 2 green plantains (peeled and sliced very thin)
- 2 tbsp coconut oil (melted)
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 2 ripe avocados
- 1/4 cup red onion
- 1 tbsp lime juice
- 2 tbsp cilantro (chopped)
- salt, to taste

Preheat oven to 375°F. Toss thin plantain slices with coconut oil, sea salt, and garlic powder.

Arrange in a single layer on parchment-lined baking sheets.

Bake for 12-15 minutes, flipping halfway, until golden and crispy. Watch carefully to prevent burning.

While chips bake, mash avocados with red onion, lime juice, cilantro, and salt.

Let chips cool (they crisp more as they cool). Serve with fresh guacamole.
