Cauliflower Crust Pizza
Ingredients
- 1 head cauliflower, riced (about 4 cups)
- 1 egg
- 1 1/2 cup mozzarella cheese, divided
- 1/4 cup Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 cup low-sugar marinara sauce
- your choice of toppings: pepperoni, bell peppers, mushrooms, olives, basil

Preheat oven to 425°F. Line a baking sheet with parchment paper.

Microwave riced cauliflower for 5 minutes. Let cool, then squeeze out as much moisture as possible using a clean kitchen towel. This step is critical for a crispy crust.

Mix the dry cauliflower with egg, 1/2 cup mozzarella, Parmesan, Italian seasoning, garlic powder, and salt.

Press the mixture into a thin circle (about 12 inches) on the parchment paper.
