Ingredients

  • 1 can cannellini beans (15 oz; drained)
  • 1 can tomatoes (14 oz)
  • 2 zucchini (diced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 4 cup vegetable broth
  • 1 cup pasta (ditalini or elbow)
  • 2 cup spinach
  • 1 tsp oregano
  • 1 tsp basil
  • 2 tbsp olive oil
  • salt and pepper, to taste
  • crusty bread for serving

Steps

    Using the sauté function, heat olive oil and cook onion, carrots, celery, and garlic for 3 minutes until fragrant.

    Add diced tomatoes, cannellini beans, zucchini, broth, pasta, oregano, basil, salt, and pepper.

    Lock the lid and cook on high pressure for 4 minutes.

    Quick release pressure. Stir in fresh spinach until wilted.

    Adjust seasoning and serve with crusty bread.
