Ingredients

  • 1 can chickpeas (15 oz; drained and patted dry)
  • 1/2 cup parsley
  • 1/4 cup cilantro
  • 3 cloves garlic
  • 1/2 onion (roughly chopped)
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 tbsp all-purpose flour
  • salt and pepper, to taste
  • 4 pita pockets
  • 1/2 cup tahini sauce
  • tomatoes, cucumber, and pickled red onion for topping
  • olive oil spray

    Pulse chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, flour, salt, and pepper in a food processor until a coarse mixture forms (do not over-blend).

    Form the mixture into 12 small patties. Refrigerate for 10 minutes to firm up.

    Place falafel patties in the air fryer basket and spray generously with olive oil.

    Air fry at 375°F for 10-12 minutes, flipping halfway, until crispy and golden brown.

    Warm pita pockets in the air fryer for 1 minute.

    Stuff pitas with falafel, drizzle with tahini sauce, and top with tomatoes, cucumber, and pickled red onion.
