Spanish Gambas al Ajillo (Garlic Shrimp)

Ingredients
- 1 lb shrimp (peeled and deveined)
- 1/3 cup extra virgin olive oil
- 8 cloves garlic (thinly sliced)
- 1 guindilla pepper or 1/2 tsp red pepper flakes
- 2 tbsp dry sherry (fino or manzanilla)
- 1 tbsp parsley (chopped)
- flaky sea salt
- crusty bread, for serving
Steps

Heat olive oil in a clay cazuela or small skillet over medium heat.

Add sliced garlic and dried pepper. Cook gently for 1-2 minutes until garlic is just turning golden (not brown).

Turn heat to high and add shrimp. Cook for 1-2 minutes per side until just pink.

Remove from heat and add sherry — it will sizzle and steam. Toss to combine.

Sprinkle with parsley and flaky sea salt.

Serve immediately in the hot dish with crusty bread for soaking up the garlicky oil.
