Ingredients

  • 6 eggs
  • 1/4 cup heavy cream
  • 1/2 cup bell peppers
  • 1/4 cup red onion
  • 1/3 cup cheddar cheese
  • 4 slices bacon (crumbled)
  • 1 tbsp chives (chopped)
  • salt and pepper, to taste

    Whisk eggs, heavy cream, salt, and pepper in a bowl until smooth.

    Fold in bell peppers, onion, bacon crumbles, and half the cheese.

    Spray silicone muffin cups with cooking spray and fill each about 3/4 full.

    Top with remaining cheddar cheese and place cups in the air fryer basket.

    Air fry at 325°F for 10-12 minutes until puffed and set in the center.

    Let cool for 2 minutes, then remove from cups. Garnish with chives and serve.
