Ingredients

  • 2 cup s all-purpose flour
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, separated
  • 1 1/2 cup s whole milk
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cup s mixed berries (blueberries, strawberries, raspberries)
  • 2 tbsp sugar, for compote
  • 1 tbsp lemon juice
  • whipped cream, for serving
  • maple syrup, for serving

    Whisk flour, 3 tbsp sugar, baking powder, and salt in a large bowl.

    In another bowl, whisk egg yolks, milk, melted butter, and vanilla. Pour into dry ingredients and mix until just combined.

    Beat egg whites to stiff peaks. Gently fold into the batter.

    For the compote, combine berries, 2 tbsp sugar, and lemon juice in a small saucepan. Simmer for 8-10 minutes, crushing some berries as they soften.

    Preheat waffle iron and cook batter according to manufacturer's instructions until golden and crisp.
