Ingredients
- 4 salmon fillets (6 oz each), skin-on
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp sake (or dry white wine)
- 1 tbsp honey
- 1 tsp fresh ginger, grated
- 1 clove garlic, minced
- 1 tbsp vegetable oil
- 1 tsp cornstarch mixed with 1 tbsp water
- steamed broccoli and rice, for serving
- sesame seeds and sliced green onions, for garnish

Whisk together soy sauce, mirin, sake, honey, ginger, and garlic in a small bowl.

Pat salmon fillets dry with paper towels and season lightly with salt.

Heat vegetable oil in a large skillet over medium-high heat.

Place salmon skin-side up and sear for 3-4 minutes until a golden crust forms. Flip and cook 2 more minutes.

Pour teriyaki sauce around the salmon. Let it simmer for 2-3 minutes.

Add cornstarch slurry to the sauce and stir gently until sauce thickens and glazes the fish.

Garnish with sesame seeds and green onions. Serve over rice with steamed broccoli.
