Pressure Cooker Steamed Pork Bao Buns (Char Siu Bao)
Ingredients
- 2 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp instant yeast
- 1 tsp baking powder
- 2/3 cup warm water
- 1 tbsp vegetable oil
- 1 1/2 cup char siu pork (or leftover pulled pork)
- 2 tbsp hoisin sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp cornstarch mixed with 1 tbsp water
- 1 1/2 cup water, for the pressure cooker

Make dough: mix flour, sugar, yeast, and baking powder. Add warm water and oil, knead until smooth. Cover and let rise for 30 minutes.

Make filling: combine diced pork, hoisin, oyster sauce, and sesame oil in a saucepan. Heat and stir in cornstarch slurry until thickened. Let cool.

Divide dough into 8 pieces. Roll each into a circle, place a spoonful of filling in the center, and pleat to seal.

Place buns on small parchment squares. Arrange in a steamer basket that fits inside the pressure cooker.

Pour 1.5 cups water into the pressure cooker, place the steamer basket inside, and use the steam function (or low pressure) for 10-12 minutes.

Quick release pressure. Serve buns warm.
