Ingredients

  • 2 cans black beans (15 oz each; drained and rinsed)
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • salt, to taste
  • 8 corn tortillas (warmed)
  • 1 ripe mango (diced)
  • 1/2 red onion (finely diced)
  • 1 jalapeño (seeded and minced)
  • 1/4 cup cilantro (chopped)
  • juice of 1 lime
  • 1 avocado (sliced)
  • hot sauce, for serving

    Make mango salsa: combine diced mango, half the red onion, jalapeño, cilantro, and lime juice. Season with salt and set aside.

    Heat olive oil in a skillet over medium heat. Add remaining red onion and cook 2 minutes.

    Add black beans, cumin, chili powder, smoked paprika, garlic powder, and salt. Cook 5 minutes, mashing some beans with a fork for texture.

    Warm corn tortillas in a dry skillet or directly over a gas flame.

    Fill each tortilla with seasoned black beans, mango salsa, and avocado slices.

    Serve with hot sauce on the side.
