Ingredients

  • 2 ripe bananas
  • 1 1/2 cup oat flour (certified GF if needed)
  • 1 cup almond milk
  • 2 tbsp maple syrup
  • 1 tbsp flaxseed mixed with 3 tbsp water (flax egg)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch salt
  • coconut oil for cooking
  • berries (sliced banana, and maple syrup, for topping)

Steps

    Mash bananas in a large bowl. Whisk in almond milk, maple syrup, flax egg, and vanilla.

    Add oat flour, baking powder, cinnamon, and salt. Stir until just combined.

    Heat a non-stick griddle with coconut oil over medium heat.

    Pour 1/4 cup batter per pancake. Cook 2-3 minutes until bubbles form and edges set. Flip and cook 1-2 more minutes.

    Serve stacked with fresh berries, sliced banana, and maple syrup.
