Ingredients
- 1 cup cashews
- 1/2 cup coconut
- 1/4 cup coconut butter or coconut oil (softened)
- 2 tbsp maple syrup
- 1 tbsp culinary-grade matcha powder
- 1 tsp vanilla extract
- pinch salt
- extra shredded coconut and matcha, for rolling
Steps

Pulse cashews in a food processor until finely ground.

Add shredded coconut, coconut butter, maple syrup, matcha, vanilla, and salt. Process until the mixture holds together when pressed.

Roll into 16 small balls.

Roll half in extra coconut and half in a light dusting of matcha powder.

Refrigerate for 30 minutes to firm up. Store in the fridge for up to 2 weeks.
