Panna Cotta with Berry Coulis

Ingredients
- 2 cup s heavy cream
- 1 cup whole milk
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 1/2 tsp (1 packet) unflavored gelatin
- 3 tbsp cold water
- 2 cup s mixed berries (raspberries, strawberries, blueberries)
- 3 tbsp sugar, for coulis
- 1 tbsp lemon juice
- fresh mint, for garnish

Sprinkle gelatin over cold water in a small bowl. Let bloom for 5 minutes.

Heat cream, milk, and 1/2 cup sugar in a saucepan over medium heat, stirring until sugar dissolves. Do not boil.

Remove from heat and stir in the bloomed gelatin until completely dissolved. Add vanilla.

Pour into 6 ramekins or glasses. Refrigerate for at least 4 hours until set.

For the coulis: cook berries with 3 tbsp sugar and lemon juice over medium heat for 5-8 minutes until berries break down. Press through a sieve for a smooth sauce.

Spoon berry coulis over each panna cotta. Garnish with fresh mint and serve.
