- salt and pepper, to taste
- 8 slices American cheese
- 4 brioche buns, toasted
- 1 tbsp vegetable oil
- lettuce (sliced tomato, pickles, and diced onion for topping)
- ketchup, mustard, and special sauce for serving

Divide bison into 8 equal balls (about 3 oz each). Do not season yet.

Heat a cast-iron skillet or griddle over high heat until smoking. Add a thin layer of oil.

Place bison balls on the skillet and immediately smash flat with a heavy spatula or burger press. Season liberally with salt and pepper.

Cook without moving for 2-3 minutes until edges are deeply crispy and browned. Flip, add a cheese slice to each, and cook 1-2 minutes more.

Stack two patties on each toasted brioche bun.

Top with lettuce, tomato, pickles, onion, and your choice of sauces.
