Ingredients

  • 2 large boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 2 heads romaine lettuce, chopped
  • 1 cup croutons
  • 1/2 cup shaved Parmesan cheese
  • 1/3 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 2 anchovy fillets, mashed (or 1 tsp anchovy paste)
  • 1 tsp Worcestershire sauce
  • 3 tbsp olive oil, for dressing

    Season chicken with olive oil, garlic powder, salt, and pepper. Grill or pan-sear for 5-6 minutes per side until cooked through.

    Let chicken rest 5 minutes, then slice.

    Whisk together mayonnaise, lemon juice, Dijon, garlic, anchovy, Worcestershire, and 3 tbsp olive oil for the dressing.

    Toss romaine with dressing until evenly coated.

    Divide salad among plates. Top with sliced chicken, croutons, and shaved Parmesan.
