Mediterranean Baked Salmon

Ingredients
- 4 salmon fillets (6 oz each)
- 1 pint cherry tomatoes (halved)
- 1/2 cup Kalamata olives (halved)
- 1 red onion (thinly sliced)
- 2 tbsp capers
- 4 cloves garlic (sliced)
- 3 tbsp extra virgin olive oil
- 1 tsp oregano
- zest and juice of 1 lemon
- salt and pepper, to taste
- dill, for garnish

Preheat oven to 400°F. Arrange salmon fillets on a parchment-lined baking sheet.

Scatter tomatoes, olives, red onion, capers, and garlic around and over the salmon.

Drizzle everything with olive oil and lemon juice. Sprinkle with oregano, lemon zest, salt, and pepper.

Bake for 18-20 minutes until salmon flakes easily with a fork.

Garnish with fresh dill and serve with the roasted vegetables from the pan.
