Ingredients

  • 3 sweet potatoes (peeled and cubed)
  • 2 tbsp coconut oil
  • salt, to taste
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 1 cup green or brown lentils (rinsed)
  • 2 cup vegetable broth
  • 1 can tomatoes (14 oz)
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp paprika
  • salt and pepper, to taste

    Boil sweet potatoes until tender, about 15 minutes. Drain and mash with coconut oil and salt until smooth.

    Heat olive oil in a large oven-safe skillet. Sauté onion, carrots, and celery for 5 minutes. Add garlic, cook 1 minute.

    Add lentils, broth, diced tomatoes, tomato paste, thyme, rosemary, and paprika. Bring to a boil, then simmer for 20 minutes until lentils are tender.

    Season filling with salt and pepper. Spread sweet potato mash evenly over the top.

    Score the top with a fork for texture. Bake at 400°F for 15-20 minutes until top is slightly golden.
