Vegan Strawberry Coconut Ice Pops

Ingredients
- 2 cup strawberries, hulled
- 1 can full-fat coconut milk (14 oz)
- 2 tbsp maple syrup or honey
- 1 tbsp lime juice
- 1 tsp vanilla extract
Steps

Blend strawberries, coconut milk, maple syrup, lime juice, and vanilla until smooth.

Pour into ice pop molds, leaving a little room at the top for expansion.

Insert sticks and freeze for at least 6 hours or overnight.

To unmold, run warm water over the outside of the mold for a few seconds.

Serve immediately.
