Ingredients

  • 1 lb boudin sausage, casings removed
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cup panko breadcrumbs
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • vegetable oil for frying (or use an air fryer)
  • Creole mustard, for dipping
  • hot sauce, for serving

    Remove boudin from casings and roll into 1.5-inch balls.

    Set up a breading station: flour, beaten eggs, and panko mixed with Cajun seasoning and garlic powder.

    Roll each ball in flour, dip in egg, then coat in seasoned panko.

    Deep fry at 350°F for 4-5 minutes until golden brown and crispy (or air fry at 400°F for 10-12 minutes).

    Drain on paper towels.

    Serve with Creole mustard and hot sauce for dipping.
