Greek Tzatziki with Vegetables

Ingredients
- 2 cup s Greek yogurt
- 1 English cucumber, grated and squeezed dry
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
- 1/2 tsp salt
- assorted vegetables for dipping: carrots, cucumber, bell peppers, cherry tomatoes, celery

Grate the cucumber and squeeze out as much water as possible using a clean kitchen towel or cheesecloth.

Mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt.

Refrigerate for at least 30 minutes to let flavors meld.

Serve in a bowl surrounded by fresh cut vegetables for dipping.
