Seitan Philly Cheesesteak

Ingredients
- 12 oz seitan (thinly sliced)
- 1 onion (thinly sliced)
- 1 green bell pepper (thinly sliced)
- 8 oz mushrooms (sliced)
- 2 tbsp soy sauce
- 1 tbsp vegan Worcestershire sauce
- 2 tbsp vegetable oil
- 4 hoagie rolls
- vegan provolone cheese slices or cashew cheese sauce
- salt and pepper, to taste
- hot cherry peppers, optional

Heat oil in a large skillet over high heat. Add sliced seitan and cook for 3-4 minutes until browned and crispy at the edges.

Add onion, bell pepper, and mushrooms. Stir-fry for 4-5 minutes until vegetables are tender.

Pour in soy sauce and Worcestershire sauce. Toss everything together.

Divide the mixture into 4 portions in the skillet. Top each with vegan cheese slices. Cover briefly to melt.

Scoop each portion into a hoagie roll.

Serve with hot cherry peppers if desired.
