Ingredients

  • 4 cup arugula
  • 8 slices bacon (sugar-free)
  • 4 eggs, fried
  • 2 avocados (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup sweet potato cubes
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • salt and pepper, to taste
  • everything bagel seasoning (check ingredients for Whole30)

Steps

    Cook bacon until crispy. Crumble and set aside.

    Fry eggs in a little bacon drippings to your preference.

    Whisk olive oil, lemon juice, and Dijon mustard for the dressing.

    Divide arugula among plates. Top with sweet potato, cherry tomatoes, avocado, and crumbled bacon.

    Place a fried egg on top of each salad. Drizzle with dressing and sprinkle with everything seasoning.
