Ingredients
- 3 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup whole milk
- 1 tbsp sugar
- 1 tsp vanilla extract
- pinch of nutmeg
- pinch of salt
- 3 tbsp butter
- powdered sugar, for dusting
- fresh lemon juice, for squeezing
- fresh berries, for topping

Preheat oven to 425°F with a 10-inch cast iron skillet inside.

Blend eggs, flour, milk, sugar, vanilla, nutmeg, and salt until smooth.

Carefully remove the hot skillet from the oven. Add butter and swirl until melted and coating the pan.

Immediately pour the batter into the hot skillet.

Bake for 18-20 minutes until puffed dramatically and golden brown. Do not open the oven door during baking.

Remove from oven (it will deflate slightly). Dust with powdered sugar, squeeze lemon juice over the top, and add fresh berries.

Slice and serve immediately.
